Dofino Provolone is marvelous as a melting cheese. Some people actually put it directly on the grill - for a quick melt before topping a hearty sandwich. It can also be placed in a small crock, quickly baked in the oven, then served with bread and crackers for dipping. Excellent with a glass of Shirazz.
