Cheese Baked Potatoes and Chicken

Ingredients:
8 medium baking potatoes, cut into large wedges
2 tbsp. olive oil
1 tsp. salt
1 lb.chicken breasts, cut into slices
2 tbsp. fresh thyme leaves
Pepper to taste
5 oz. Dofino Havarti cheese, shredded

Cooking Directions:
Sauté chicken in 1 tbsp. of olive oil over medium heat. Place the potato wedges on a greased baking sheet and drizzle with 1 tbsp. olive oil. Sprinkle with half the salt and bake potatoes at 350° F on middle rack of the oven for 10 minutes. Remove potatoes from oven and put them in an ovenproof dish. Layer chicken slices over the potato wedges and cover with thyme leaves, pepper and the rest of the salt. Sprinkle cheese all over and finish baking for 30 minutes. Garnish with thyme leaves.
