Big Flavor for the Big Game

 Grilled Cuban Sandwich

Makes 4 servings

Cuban Sandwich with Havarti

As this sandwich is grilled, the Dofino® Creamy Havarti melts, encasing the ham & tart pickle for a perfect blend of flavors in each bite.
 
What you need:
1 loaf of ciabatta bread or four ciabatta rolls
2 tablespoons mustard
8 ounces Dofino® Creamy Havarti, sliced thin
1 deli pickle, sliced thin, lengthwise
½ pound lean black forest ham, sliced thin

 

PAN: Cast iron 10-inch skillet


What you do:
Cut the bread in half, lengthwise.  Spread both sides of the bread with mustard.  Layer  half the Dofino® Creamy Havarti, pickle, and ham on bottom half of bread. Top with remaining cheese; replace bread top and gently press together.
Place sandwich in skillet over medium heat. Press down to flatten with a second skillet. Grill until the cheese melts, about 5 minutes on each side.

Remove sandwich and cut into 4 pieces. Eat while hot!

 

Tips for a healthy tailgate:
 
Big, bold flavors speak to your senses and your appetite, so
you feel satisfied sooner. Chili, an all-time tailgate favorite, can
be packed with versatile and nutritious ingredients. Choose
reduced-sodium beans and tomato products as the base for
the chili. Replace beef with ground turkey or chicken as a
lighter alternative. Sprinkle the top with a cheese variety, such
as Dofino® Fontina, that has a big flavor.

• Making cornbread to serve with your chili? Use either a low-fat or fat-free buttermilk and olive oil in your recipe for a healthy, lower-fat version. Add grated Dofino® Smoked Gouda for a terrific full-flavored cornbread.

• Fill fresh baked potato skins with homemade salsa, a sprinkling of a full-flavored cheese such as Dofino® Gouda, and fat-free sour cream. Add some smoked paprika or even some chipotle powder to spice them up.

• To make healthier Buffalo chicken bits, bake skinless chicken pieces seasoned with a chipotle rub, then dipped in whisked egg white and dredged in panko breadcrumbs or crushed cornflakes. Serve with a Saga® Classic Blue Brie dipping sauce

• Serve homemade baked tortilla chips or pita crisps, and serve them with homemade salsa, reduced sodium refried beans and melted Dofino® Jalapeño Havarti.
